Quinoa has so many health benefits that it is considered as a superfood but how do we include it in our diet is a question asked by several people. Today I am bringing you a one-pot vegetable quinoa pulao recipe which will satiate your taste buds and will give you the motivation to have this super seed regularly.

Vegetable Quinoa Pulao

Cooking time




  • 1 cup Quinoa

  • 2 cups chopped vegetables

  • 1/2 cup onion

  • 2 Green Chillies

  • 8-10 piece cashew & almonds

  • 2 Tbsp Clarified butter (Ghee)

  • Spices
  • 1 tsp Chilly powder

  • 2 tsp Coriander powder

  • 1/2 tsp Turmeric powder

  • 2 tsp salt

  • 1 tsp Garam Masala

  • Whole Spices
  • 7-8 Peppercorns

  • 1 Bayleaf (Tez Patta)

  • 1 Cardamom

  • 2 Cloves (Laung)

  • 1 small piece of cinnamon (Dalcheene)

  • 1 tbs cumin seeds (Jeera)


  • Put the pressure cooker on medium heat. Add 2 Tbsp ghee.
  • When ghee is hot add all the whole spices and dry fruits.
  • Saute for 1-2 minutes.
  • Add finely chopped onion in the pan and saute till it’s golden brown.
  • Put all the vegetables in the pot.
  • Now add all the spices.
  • Mix properly, then add quinoa.
  • Put 3 cups of water and close the lid.
  • Pressure cook till 5 whistles.


  • If you don’t have a pressure cooker, you can cook this recipe in a normal pot too. Jut cover the lid after putting water and stir it occasionally. It may take 30-40 minutes.
  • If you don’t have all the above mentioned whole spices then don’t worry just put the ones you have, the result will still be good.
  • For this recipe, you can add your choice of vegetables there is no hard and fast rule here.
