Hummus Pasta

hummus pasta

I just love pasta and when you add the goodness of hummus to it, nothing can beat it. This Hummus Pasta recipe is perfect for lazy weeknight dinner, requires very minimal effort. It’s a perfect way to use leftover hummus.

Preparation time: 30 minutes

  • 2 cups pasta
  • 1 cup hummus
  • 1 cup milk
  • 1 cup of pasta water
  • 1 cup chopped vegetables
  • 1/2 cup Onions
  • 3-4 pods Garlic
  • 2-3 tbs Oil

  • Salt 2 tbs
  • Black Pepper 1/2 tbs
  • Chilly Flakes 1 tbs
  • Oregano/ Italian Herbs 1 tbs

I am using homemade hummus for this pasta, recipe of which you can find here:

Boil 4 cups of water, add 1 tbs slat. When water starts boiling add the pasta. While our pasta is cooking. Chop all the vegetables. I like to load my pasta with veggies. I am adding zucchini, broccoli, yellow & green bell pepper. You can add your favorite vegetables like spinach, mushrooms, beans.

In other pan heat oil and first, add crushed garlic. Saute until garlic turns little brown (1-2 minutes). Add the rest of the vegetables and saute for 4-5 minutes.

Once pasta is cooked. Drain access water and save 1 cup of pasta water. Pasta water has starch and helps in keeping the sauce thicker. I have used regular milk, you can use any plant-based milk to keep it vegan. (Oats, Almond, Coconut milk). Now to your vegetables add the cooked pasta, milk, hummus, and pasta water. Mix all the spices. Let it cook for 5 minutes so that pasta soaks the sauce.

Your pasta is ready. It will serve 2-3 people. Serve it hot. Enjoy with some wine and maybe some garlic bread.
